These delicious Air Fryer Carrot Fries are easy to make and healthy! This crispy side is both salty and a little sweet, making the perfect healthy alternative to french fries.

Carrots have always been a vegetable that I’ll eat because it’s there, not because I truly love them. After making these carrot fries, I can literally eat carrots every day! This recipe is super easy to make, only taking minutes to prep. You just mix all the ingredients together and toss in the air fryer!

What do I need to make Air Fryer Carrot Fries?

  • Carrots
  • Olive oil
  • Salt
  • Pepper
  • Garlic powder
  • Onion powder
  • Paprika

How do I make this recipe?

1. Preheat oven. Next, wash, peel, and cut carrots into fries.

2. Add to bowl with the spices and oil.

3. Toss in the bowl until all the carrots are evenly coated.

4. Place carrots in a single even layer in the tray of the air fryer or the air fryer basket and cook until crispy on the outside and soft on the inside. These fries are best when served immediately after cooking, but if you need to reheat them, toss them back in the air fryer for a few minutes so they stay crispy.

Can I make Carrot Fries in an oven?

Absolutely. I’ve been making carrot fries long before air fryers were around. Just preheat oven to 375 and place carrots in a single on a baking sheet for 20 minutes or until tender with a crispy outer layer.

Serve these carrot fries just like french fries or sweet potato fries dip in your preferred sauce. I love eating these with ranch or dipping in some mayo.Air Fryer Carrot fries on plate

Air Fryer Carrot Fries

Ingredients
  

  • 4 medium carrots
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)

Instructions
 

  • Preheat air fryer to 350 degrees.
  • Wash and peel carrots then cut into sticks or "fries."
  • Put carrots into a medium mixing bowl. Add olive oil, garlic powder, onion powder, sea salt, black pepper, and paprika (optional). Toss to coat.
  • Place carrot fries in a single layer in air fryer and cook for 15-20 minutes, or until crispy, flipping halfway.
  • Serve immediately.

Notes

  • Carrot Fries are best served immediately but can be reheated in air fryer at 375 degrees for 3-5 minutes.

Why buy this spice mix from the grocery store when it only takes a few minutes to make this homemade recipe? Once you realize just how easy and delicious this spice mix is, you’ll only make it from scratch going forward.

What ingredients do I need to make Pumpkin Pie Spice?

Once I realized that this recipe only used 5 common ingredients, I have never purchased the store version since. It’s so easy to make and can easily be batched right before making a pumpkin recipe.

All you need is:

  • Cinnamon
  • Nutmeg
  • Ground Ginger
  • Cloves
  • Allspice

How long can I store this spice mix?

As a general rule, you can store spice mixes as long as the soonest expiring ingredient. I usually double or triple this recipe and make it once per season.

Ingredients
  

  • 3 tablespoons cinnamon
  • 2 teaspoons nutmeg
  • 2 teaspoons ground ginger
  • 1 ½ teaspoons cloves

Look no further for a Lemon Bread Recipe that is both gluten-free and dairy-free! This gluten-free lemon bread is perfectly tangy, delicious, and is bursting with lemony flavor. It’s great to have with your morning coffee or to bring to a brunch!

I don’t know about you, but I want all the lemon-flavored treats when it starts to get warm out. The perfect mix of sweet and sour gets me every time. If you are a lemon lover like me, then you will absolutely love this recipe.

What you’ll need to make this lemon bread.

  • All purpose gluten-free flour
  • granulated sugar or substitute
  • baking powder
  • Salt
  • Eggs
  • Dairy-free milk
  • Oil
  • Lemons

How do I make Gluten-Free Lemon Bread?

  1. Preheat oven and grease a glass loaf baking pan; set aside.
  2. In a medium mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate medium mixing bowl, mix eggs, dairy-free milk, oil, and lemon zest. Pour the dry ingredients into the wet ingredients and mix well.
  4. Pour the batter into the loaf pan. Bake for 50 minutes, until a wooden toothpick comes out clean. Remove from the oven and let cool in the pan for about 10 minutes, then remove from pan and let cool on a rack.

How do I make the Glaze? Do I have to use glaze?

The glaze is completely optional! This bread is delicious even without the glaze.

  1. In a separate small bowl, mix the remaining sugar and lemon juice and stir until dissolved.
  2. Drizzle the lemon sugar glaze over the top of the bread.

Ingredients
  

Bread Ingredients

  • 1 ½ cups all-purpose gluten-free flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 cup milk of choice
  • 1/2 cup oil
  • Zest from 1 large lemon

Glaze Ingredients (optional)

  • 1/4 cup sugar
  • Juice from 1 large lemon

Instructions
 

Lemon Bread

  • Preheat oven to 360°F and grease a loaf pan.
  • In a medium bowl, mix together flour, sugar, baking powder, and salt.
  • In a separate large bowl, mix eggs, milk, oil, vanilla extract, and lemon zest.
  • Slowly poor the dry ingredients into the wet and stir until combined.
  • Bake for 50-55 minutes or until edges are golden brown and a toothpick inserted into the middle comes out clean.
  • Allow bread to cool in the loaf pan for about 15 minutes then remove from loaf pan and place on a cooling rack until cooled completely.

Glaze (optional)

  • In a small bowl, mix sugar and lemon juice, then stir until sugar dissolves.
  • Drizzle evenly over cooled lemon bread.
  • Store in an airtight container at room temperature for 3-4 days.

Gluten-Free Pumpkin Chocolate Chip Cookies

The weather has turned and it actually feels like fall here in Cleveland – and it looks like it is finally here to stay. Don’t get me wrong, I love summer, but the cooler temperatures bring thoughts of hayrides, hot cocoa, football, and pumpkin EVERYTHING.

These Chocolate Chip Pumpkin Cookies are great to bring as a fall treat when considering possible dietary restrictions (careful with coconut allergy – this recipe uses coconut oil, but may be substituted with vegan butter). The best part about these cookies is that they taste so good that no one would even know that they’re gluten-free and dairy-free!

  • Pumpkin puree
  • Chocolate chips
  • Gluten-free all-purpose flour
  • Granulated sugar
  • Brown sugar

Helpful tip for picture-perfect cookies –  save a few chocolate chips to press on top of each cookie right when you take them out of the oven.

 

Pumpkin Chocolate Chip Cookies

Ingredients
  

  • 3/4 cup dark brown sugar packed
  • 1/2 cup granulated sugar
  • 1/2 cup coconut oil solid
  • 2 tsp vanilla extract
  • 2 tbsp unsweetened coconut milk
  • 2 tbsp unsulphured molasses
  • 1/3 cup pumpkin puree
  • 2 ¼ cups gluten-free all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 1 ½ cups dairy-free/gluten-free chocolate chips divided

Instructions
 

  • Preheat oven to 375°F and line a large baking sheet with parchment paper.
  • Using a stand mixer or hand mixer, beat the sugars, coconut oil, and vanilla until smooth (About 2 minutes). Add coconut milk, molasses, and pumpkin puree and mix until well combined.
  • In a separate bowl, combine flour, baking soda, salt, and pumpkin pie spice, and mix.
  • Add the dry ingredients into the wet ingredient mixture and mix until well combined. Fold in chocolate chips, saving a few for after baking.
  • Scoop the dough into 12 large balls and place on cookie sheet. Bake for 9-11 minutes, or until the edges of the cookies are golden and set around the edges.
  • Immediately after removing cookies from oven, press remaining chocolate chips onto the tops for picture-worthy cookies. Cool completely on cookie sheet, then devour!

This easy Pad Thai recipe is delicious and can be made in just 30 minutes! It’s restaurant-quality AND it’s gluten and dairy-free!

Gluten-Free Pad Thai

I have been eating a gluten-free diet for a few years now and I LOVE that I can still eat Pad Thai! This Pad Thai recipe will make you feel like you’re eating takeout.  In fact, this is one of the most frequently requested dinners in my house… and I am not mad about it!

 

How do I make Pad Thai?

Mix all the sauce ingredients together in a bowl (brown sugar, fish sauce, rice vinegar, soy sauce, sriracha sauce, and peanut butter) then set aside. Next, cook the chicken and veggies in a large pan or wok, add the egg to the same pan and scramble, boil the noodles per package directions, then mix everything together and you’ve just made yourself some tasty pad thai!

What noodles do I use for Pad Thai?

Pad Thai noodles are made from rice, which is gluten-free by nature! You can buy them at most grocery stores and even at Target! Pad Thai noodles are This made it so easy to modify this into both a dairy and gluten-free dinner. You can also substitute different veggies such as red pepper, onion, peas, mushrooms, or broccoli.

Can I modify this Pad Thai recipe?

Absolutely.

Change up the veggies – I use zucchini and carrots simply because this is how my favorite local takeout place does it. This dish would also be good with broccoli, peppers, onion, mushrooms, and peas.

Switch up the protein – Chicken has always been my go-to, but why not add or change it up to shrimp, beef, pork, or tofu?

Spice it up (or down) – My fiance LOVES Sriracha sauce, so he always wants me to add a little more and it’s great! I’ll sometimes even add some crushed pepper flakes to spice it up. Use half the Sriracha and add a little more peanut butter to decrease the heat.

 

Gluten-Free Pad Thai

This easy Pad Thai recipe is delicious and can be made in just 30 minutes! It’s restaurant-quality AND it’s gluten and dairy-free!

Ingredients
  

  • 8 oz Flat rice noodles
  • 8 oz uncooked chicken cut into bite-sized pieces
  • 3 cloves garlic minced
  • 3 tbsp olive oil
  • 2 eggs
  • 2 green onions
  • 2 limes
  • 1 medium zucchini chopped
  • 1 cup fresh bean sprouts
  • 1/2 cup roasted peanuts
  • 1/4 cup shredded carrots
  • 1/4 cup fresh cilantro

Pad Thai Sauce

  • 5 tbsp light brown sugar
  • 3 tbsp fish sauce
  • 2 tbsp creamy peanut butter
  • 1 tbsp soy sauce gluten-free
  • 1 tbsp sriracha sauce
  • 2 tbsp rice vinegar

Instructions
 

  • Cook noodles per package instructions.
  • Mix all sauce ingredients in a small bowl. Set aside.
  • In a large saucepan, heat 1 1/2 tbsp olive oil.
  • Add chicken and garlic and cook 3-4 minutes or until cooked through. Transfer to a clean plate.
  • Add the remaining olive oil to the pan along with the carrots, zucchini, and bean sprouts. Cook for 2-3 minutes, then push the veggies to the side. Add the eggs and scramble, cutting into smaller pieces as they cook.
  • Set aside a few crushed peanuts, then add noodles, peanuts, beansprouts, and sauce to the pan. Toss until everything is mixed and coated.
  • Top it off with cilantro, chives, remaining peanuts, and lime wedges.

This tasty Cinnamon Applesauce Bread is both gluten-free and dairy-free!

Cinnamon Applesauce Bread

Fall is here, which means I get to eat apple everything! This cinnamon applesauce bread is my favorite to bring to family brunch on Fall Sunday mornings. This bread is also perfect as a Thanksgiving or Christmas bread with the cinnamon and nutmeg flavors.

How do I make Cinnamon Applesauce Bread?

You’re in luck because this delicious Cinnamon Applesauce Bread recipe is super easy to make and has a prep time of only 10 minutes! First, combine all of the dry ingredients, then in a separate bowl, combine wet ingredients. Mix the dry ingredients into the wet, pour into a loaf pan, bake, and then devour!

I used store-bought unsweetened applesauce for this recipe, but it would be delicious with homemade applesauce as well. Every Fall I get TONS of apples from family members who overestimate how many apples they can eat from going apple picking!

I typically use Namaste Foods Gluten-Free Flour Blend, but I linked a few other flour blends and some other helpful items below as well.

Cinnamon Applesauce Bread

Ingredients
  

Dry Ingredients

  • 1 1/2 cups gluten-free all-purpose flour
  • 1 cup gluten-free old-fashioned oats
  • 2 tsp cinnamon
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 3/4 tsp baking soda
  • 3/4 tsp salt
  • 1/2 tsp nutmeg

Wet Ingredients

  • 2 eggs
  • 1 cup applesauce
  • 1/2 cup coconut milk (or milk of choice)
  • 1/3 cup coconut oil melted
  • 1 tsp vanilla

Instructions
 

  • Preheat oven to 350°F (176°C). Line a 9x5 loaf pan with parchment paper for easy removal.
  • Combine dry ingredients (sugar, flour, oats, baking powder, baking soda, salt, nutmeg, and cinnamon) in a medium-sized bowl.
  • Mix wet ingredients in a large mixing bowl, then slowly add in dry ingredients and mix until combined.
  • Pour into prepared loaf pan and bake for 55-60 minutes.
  • Let loaf cool before removing from pan then serve!
