Carrots have always been a vegetable that I’ll eat because it’s there, not because I truly love them. After making these carrot fries, I can literally eat carrots every day! This recipe is super easy to make, only taking minutes to prep. You just mix all the ingredients together and toss in the air fryer!

What do I need to make Air Fryer Carrot Fries?

  • Carrots
  • Olive oil
  • Salt
  • Pepper
  • Garlic powder
  • Onion powder
  • Paprika

How do I make this recipe?

1. Preheat oven. Next, wash, peel, and cut carrots into fries.

2. Add to bowl with the spices and oil.

3. Toss in the bowl until all the carrots are evenly coated.

4. Place carrots in a single even layer in the tray of the air fryer or the air fryer basket and cook until crispy on the outside and soft on the inside. These fries are best when served immediately after cooking, but if you need to reheat them, toss them back in the air fryer for a few minutes so they stay crispy.

Can I make Carrot Fries in an oven?

Absolutely. I’ve been making carrot fries long before air fryers were around. Just preheat oven to 375 and place carrots in a single on a baking sheet for 20 minutes or until tender with a crispy outer layer.

Serve these carrot fries just like french fries or sweet potato fries dip in your preferred sauce. I love eating these with ranch or dipping in some mayo.Air Fryer Carrot fries on plate

Air Fryer Cauliflower Wings

October 4, 2020 by Alysha DeWees Leave a Comment

This tasty gluten and dairy-free appetizer is perfect for game day snacking. This Buffalo Cauliflower Wing recipe is made in the air fryer and is flavorful, relatively healthy, and perfectly crispy. Air Fryer Cauliflower Wings are easy to make and will quickly become a family favorite.

When football starts back up in the fall, I start thinking about all the appetizers. Another great appetizer I love to make is this Dairy-Free Buffalo Chicken Dip. Also, I have a homemade Dairy-Free Ranch Dressing recipe that’s the perfect dipping sauce for cauliflower wings.

What ingredients do I need to make this recipe?

  • Cauliflower
  • 1 egg
  • Buffalo sauce
  • Gluten-Free All-purpose flour
  • Garlic powder
  • Onion powder
  • Salt

Overhead image of Air Fryer Cauliflower Wing IngredientsHow to make Air Fryer Cauliflower Wings

1. Wash and cut florets into a combination of large and small pieces, then place cauliflower florets in a single even layer in air fryer and cook at 400°F for 5 minutes. This allows the cauliflower to start to crisp before adding the buffalo sauce mixture.

2. While cauliflower florets are cooking, mix together flour, garlic powder, onion powder, and salt in a medium bowl. Set aside.

3. In a large bowl whisk together the egg and buffalo sauce.

4. Remove cauliflower from air fryer and put into the egg and buffalo sauce mixture and stir to coat florets evenly.

5. Sprinkle dry flour mixture over cauliflower a little at a time and mix to coat cauliflower florets thoroughly.

6. Place coated florets in a single even layer in air fryer and cook at 350°F for 20 minutes. Cauliflower wings should be crispy and slightly browned.

7. I like to toss the cauliflower wings in 1/4 cup of buffalo sauce and cook for an additional 3-5 minutes, but they taste great without this step as well. For best taste, serve immediately.

Helpful tips for making Air Fryer Cauliflower Wings

Prep ahead of time. The hardest part about making these wings is cutting up the cauliflower – I’m serious. If I have time constraints and want to cut some time out of the prep, then I’ll buy the pre-cut ready to eat cauliflower florets. This is a huge time saver for me!

Cook right before serving. Since these “wings” start to lose crispiness quickly after cooking, It’s best to eat them right after cooking.

Reheat in the air fryer. If you do happen to have any leftovers and want to re-crisp your cauliflower wings, then set the air fryer to 350°F and cook for 5-10 minutes, or until warmed and crispy.

September 19, 2020 by Alysha DeWees Leave a Comment

These bars are moist, soft, and loaded with chocolate chunks and pumpkin spice flavors. Pumpkin Chocolate Chunk Bars taste just like Fall and will get you ready for the change of weather.

I always look forward to the fall when I can make all of the pumpkin recipes. I also love making these easy Pumpkin Chocolate Chip Cookies that are gluten-free and dairy-free as well.

Ingredients needed to make these pumpkin bars

  • All-purpose gluten-free flour
  • Pumpkin pie spice
    • I’ve used both store-bought pumpkin pie spice and my homemade pumpkin pie spice mix, but honestly, it’s way cheaper to just make your own and it only takes a few seconds!
  • Cinnamon
  • Baking soda
  • Salt
  • Butter
  • Applesauce
    • You can use any applesauce – I’ve used both sweetened and unsweetened applesauce, both still make delicious pumpkin bars, but I prefer using unsweetened applesauce. If you have any extra apples at home, try making this homemade Instant Pot Applesauce recipe. It’s super easy to make and the applesauce tastes so fresh!
  • Granulated sugar
  • Light brown sugar
  • 1 Egg
  • Vanilla extract
  • Pumpkin puree
  • Gluten-free chocolate chunks or chips
    • For this recipe, I used the Enjoy Life semi-sweet Mega Chunks

Ingredients for Pumpkin Chocolate Chunk Bars

How to make Pumpkin Chocolate Chunk Bars

1. Preheat oven to 350°F and grease a 9×13” baking dish.

2. In a small mixing bowl, mix together the flour, pumpkin pie spice, cinnamon, baking soda, and salt. Set aside.

Then add the pumpkin puree and mix until combined. See the next for how the mixture should look – you’ll see some butter that is not completely incorporated, but don’t worry – this is how it should look!

4. Mix in the dry ingredients slowly until combined. The mixture should now look uniform.

  • Apples
  • Sugar (Optional)
  • Cinnamon (Optional)

How to make Instant Pot Applesauce

This recipe is so easy to make! First cut up the apples into large slices, basically cutting out just the core. The larger the apple slices the fewer apple peels you will need to remove after cooking.

Overhead image of apples cut into large slices in bowl.

Next, place apple slices and water in Instant Pot and secure lid. Set the Instant Pot to manual or the pressure cook set to high for 5 minutes. After pressure has been reached and the 5 minutes of cooking has been completed, allow for natural pressure release for an additional 5 minutes before switching to quick pressure release.

Use 2 forks to pull the apple peels away from the apples. The peels should come off easily, so you can also use tongs to remove the peels as well.

Mix until the consistency is uniform then add sugar and cinnamon to taste. This applesauce is delicious when served both warm and cold. You can store this applesauce in the refrigerator for up to one week.

Crispy Roasted Chick Peas

July 27, 2020 by Alysha DeWees Leave a Comment

These Crispy Roasted Chickpeas are perfect to snack on alone or as a salad topping. They are gluten-free, dairy-free, and really tasty.

Overhead shot of Crispy Roasted Chickpeas in a small white bowl on a black and white background

Crispy Roasted Chickpeas

I make this snack at least weekly to munch on while catching up on my favorite TV shows. If I ever have any leftovers, I’ll just toss them in a salad in place of croutons. So easy and healthy!

What ingredients do I need to make Crispy Roasted Chickpeas?

  • 2 cans of chickpeas
  • Olive oil
  • Salt
  • Pepper
  • Garlic powder

Feel free to mix up the spices! I sometimes add a little chili powder and cayenne to spice it up a bit.

Overhead close up image of Crispy Roasted Chickpeas in bowl

How to make Crispy Roasted Chickpeas

I like putting the sheet pan in the oven while preheating so the chickpeas will start crisping right away when placed on the pan. Next, rinse and dry the chickpeas with a paper towel. Let me repeat that, dry the chickpeas completely with a paper towel. This is the key step to getting the chickpeas nice and crispy. Next, place them in a medium bowl, add all of the ingredients, and stir until the chickpeas are evenly coated.

Close up shot of seasoned Chickpeas in a white bowl

Lay the chickpeas in a single even layer on a rimmed pan. If you’re making a larger batch, use two pans to keep the single layer. The chickpeas just won’t get crispy enough otherwise.

Overhead image of seasoned Chickpeas evenly spread out on a backing sheet

Bake for 20 to 25 minutes or until golden and crispy. Let cool before removing from pan, then enjoy immediately. This snack is best when served immediately. The chickpeas will stay crispy for a few hours, but taste best when right out of the oven.

I used store-bought unsweetened applesauce for this recipe, but it would be delicious with homemade applesauce as well. Every Fall I get TONS of apples from family members who overestimate how many apples they can eat from going apple picking!
